Pizza Zucchini Casserole - Home Cooked Recipe #82

Do you love pizza? I love pizza! Most people I know are a fan of pizza. Also, most people I know have gone low carb or keto lately. This is a perfect recipe for those kind of diets! And it's pizza flavored! This recipe is also versatile, because you could really dress it up with your favorite pizza toppings. You could make it a meat lovers by adding sausage, bacon, ham, ground beef, etc. You could make it a supreme by adding bell peppers, onions, mushrooms, etc. If you don't like tomato sauce, use alfredo sauce. Use the recipe as a base and use your imagination to top it the way you would your favorite pizza!

Pizza Zucchini Casserole

Ingredients:

  • 2 medium zucchini, shredded
  • 2 eggs, beaten
  • 1/2 cup pizza or marinara sauce (make your own or use store bought)
  • 1 cup parmesan
  • 2 cups mozzarella
  • 1/2 package pepperoni (I use Armour, it has a nice, spicy kick)
  • salt & pepper


Directions:
Preheat oven to 400. *Tip make sure you squeeze out excess moisture in the zucchini first. I like to lay mine on some paper towels and leave it for an hour or so. Super easy* Mix together in a large bowl the zucchini, eggs, parmesan, salt, pepper, & 1/2 the mozzarella (1 cup). Press mixture into a 9x13 pan and bake for 20 minutes. Take out of the oven and top with pizza sauce, cheese, and then pepperoni. Place back into the oven and continue baking for another 20-30 minutes.  Enjoy!

Pizza Pockets - Home Cooked Recipe #77

This week's recipe is not the healthiest, but it's not the most unhealthy either.  And the bonus is it is easy to make, you can put whatever fillings you want inside, and it's fairly inexpensive!  I like something easy for weeknights, especially when I have dart league or something else going on that day. This recipe fits the bill, and it's delicious!

PIZZA POCKETS

Ingredients:

  • 1 tube crescent rolls
  • 2 oz shredded mozzarella
  • 1/4 cup pizza sauce
  • pepperoni
  • parmesan


Directions:
Preheat oven to temperature on crescent roll package (mine was 375).
Unroll dough onto foil-lined, greased baking sheet. Take half the dough for the bottom, pressing the seams together so it is one rectangle.  Top with sauce, pepperoni, and cheeses.  Take the other half of the dough and place on top, sealing the seams AND the edges.  Bake for 15-20 mins.  Enjoy!
***NOTE:  You can jazz this particular one up by brushing the top with garlic butter, adding other pizza toppings to the filling (i.e. sausage, onions, peppers, etc), OR make an entirely different filling altogether such as cheddar, chicken, & broccoli or ham, cheese, and pineapple.  Your creativity is the limit!

Special Post - Halloween 2013

Party Spread
Halloween is a great time of year.  It brings out a lot of creativity in people, including in the food department.  This year I attended a party at a close friend's house and we had a blast.  Everyone had cool and original costumes.  But the food was just as interesting!  The hostess made individual pizzas that had cheese in the shape of ghosts with olive bits for eyes and mouths.  She also made breadsticks into the shape of bones.  For dessert, she made "toe" cookies.  Her daughter made deviled eggs with olive "spiders" on top.  So creative!!!  I wish I had done some more research to make my food more festive.  My dishes included an antipasto platter and a dill dip in a bread bowl, delicious, but I know next year I will make my food a little more Halloween related!  Enjoy the pictures below of some of the party food!
